Brenda Potatoes

Forty years ago, my good friend Brenda gave me a recipe that I'd forgotten about.  It was a staple around the house for twenty years, then I forgot about it.  Today, I was out in the shop, casting about for something to cook with a meatloaf, and thought about Brenda Potatoes.  Oh, it's good with meatloaf.  Potatoes and onions baked in butter and cheese.

Brenda Potatoes

5 lb russet potatoes,washed and scrubbed.
1 large yellow onion
Salt, pepper
Margarine (tub butter)
2 cups grated cheese.  Your choice.

Prep

Scrub those potatoes and cut them into circles.
Peel the onion and cut it into rings.
In a large Dutch oven, coat the inside liberally with tub butter.
Layer potatoes, onions, seasoning between layers.  Continue until you're finished, then add the cheese across the top.   Put the lid on the Dutch oven and bake at 375 for one hour.
