It's getting that time of year again, when cool mornings and warm afternoons put us in the mood for good, filling food. Plain fare. We have people coming over for lunch, and I'm in the mood for jambalaya. Some old, dead chicken, some good smoked sausage, onion, bell pepper, and celery. Some Tony's seasoning, and you have what you need.
Everything is prepped now, and I'm waiting another hour before I add the rice and chicken broth and slip it in the oven until the rice is tender. My step-by-step recipe is here.
