I spent the afternoon doing a carpentry project, a deck box for pool toys. I wanted to construct it of the same materials as the deck, 5/4 treated lumber, so I went to Lowe's this morning and bought a bunch of deck boards.
Damn thing is heavy. It's five feet long and 18 inches high, just the right size to double as extra seating on the deck. I hope the smaller grandkids can lift the lid.

Weigh the lifting force required with a fishing scale, then get some gas lifts in the right force range.
Rivrdog - good idea. Only problem is, I don't have a fishing scale. I'll try to find a work-around.
Someone in your clan must have something to weigh those huge garfish I keep seeing caught on the reality fishing programs.
You need to do something to keep the lid from falling on one of the kids. A strut is a good idea, there is a chest lid prop that holds the lid up but you must raise the lid completely before it engages. The prop may not work well for a small child. You might consider self closing hinges but wind them in reverse so the spring helps open the lid. They may be adjusted to what resistance is necessary.

+1 on what Deacon said.
I am always impressed by people who know how to build stuff. And then doubly impressed when it works. (And looks good, too!)
No fish scale? How about a trigger pull gauge?
Looks good. +1 on something to keep the lid up - don't want little kids' fingers squashed. Here's a scale - I just bought one myself, to use for trigger pulls:
