It ain't hard guys. Low and slow is the key to a good brisket. YouTube will help you with the cooing. It is my firm belief that all brisket needs is salt and pepper, and 225F for about 12 hours. You can add more if you like, but all it needs is salt and pepper.
UPDATE FOR TYPO> Commenter is right. It should be 225F. Fixed above, too. Cooking at 125 would ruin a good piece of meat.
