We were talking at the barber shop this morning, and someone said that they hadn't ever seen a potato dish at a Mexican restaurant.
Come to think of it, I've never seen a potato dish in an Italian restaurant. Nor an Oriental restaurant.
Tatiers won't grow in Mexico or Italy?

My wife and I ate potato pizza in Rome. It was really good.
Do a search. They all here have quite a few recipes
Get on down to Peru, they have over a thousand versions.
Hispanics DO have potato recipes, we just don't see many of them up here.
Gnocchi are made from potato flour. They are Italian.
Papas con chorizo y huevos (potatoes with chorizo and eggs) are excellent as is or in a burrito, taco, torta, or gordita. The egg is not absolutely necessary, but I like eggs.
Papas Fritas (skillet fried sliced fries) is very common down here in the RGV
A alternate recipe of square cut and heavily seasoned is also done, but I don't remember the name of it.
Potato is very versatile.
I'm reading this post late, but here I happen to sit munching on a red potato that has been boiled with a Zatarain's bag and various goodies not the least of which were andouille and shrimp. All but the taters are long gone, as will be the taters in a little while. Worth the morning dragon breath.
