Red beans and sausage over rive is one of the simplest recipes I know. It's perfect for cold, rainy days when you simply want something warm, filling, and hearty. Over the years, Belle and I have turned it into an almost no-cook recipe. We own several slow-cookers and we use them for lots of things, red beans included.
Red Beans
Ingredients
1 lb red beans, washed and sorted
1 lb good sausage, sliced into rounds
12 cups water
Salt to taste

Cooking
Put all ingredients into a slow-cooker, turn it on low, and walk away from it for about 12 hours. Leave it alone, it's fine.
I put a pot of red beans on last night about 8:00, Went to bed. Today, abouyt 11:13 I put on a pot of rice. We have corn bread on the counter. Life is good.

Looks like a great recipe. I would have added " Slap your mama" seasoning and a bit of Tobasco. Otherwise, seems like a tasty meal.
I add onion and bell pepper to mine.
If you don't have the patience to wait that long and you have a quick cooker, you can have your redbeans fix in an hour or so.
Put the beans in the cooker with water (6 cups water, 2 cups beans).
Half hour later, they're done.
Saute some good REAL andoullie, add the trinity - Onion, celery, pepper and garlic. Put in the beans, add k-pauls meat magic and Tabasco and let simmer 1/2 hour or so. Done.
