What's fer lunch? How about a simple alfredo sauce with fettuccini noodles? Easy-peasy.
Belt a sick of butter in a large skillet. While it's melting, start a pot of water for the pasta. When the butter is melted, add some minced garlic, maybe a tablespoon to the butter and let it get tender. Then, add a pinto f half-and-half to the butter. Or heavy cream if you'd like. When that simmers, add fresh parmesan cheese (I used a pound), and blended that in, then about a half-pound of sharp cheddar, simply because I could.
When the pasta is ready, drain then add it to the sauce. Give it a good stir.
About 30 minutes, and most of that is boiling the water for the pasta. Belle thought it turned out fine, and I did too. Simple, quick, filling. It's what's for lunch.
