On a cold dreary Sunday morning, the question becomes what we're going to do for lunch. This type weather deserves quick, easy, hearty and warm, so we decided to make a dump soup in the crock pot.
Cheesy Enchilada Soup
Ingredients
One rotisserie chicken, bought at the local grocers.
6 cans Progresso Chicken Cheese Enchilada Soup
2 cans Original RoTel
6 cans Progresso Chicken Cheese Enchilada Soup
2 cans Original RoTel
2 cans whole kernel corn, drained.
Prep
Peel that chicken off the bone, shred or cut into bite-sized pieces. Dump all that soup, corn and RoTel into the crock pot. Heat till warm. Serve with corn chips, or saltine crackers., and top with shredded cheese.

ReplyDeleteYes, it sounds very good, but just adding up the estimated costs in my head makes it sound like an expensive meal maybe suitable for a party or such. Rotisserie Chicken, either $5 or $6, 6 cans of the cheesey soup at say $1.50 or $2 per can, 2 cans of Ro-tel at maybe $3 or $4, and at least a dollar for 2 cans of corn. That adds up to between $18 and $25 total. I would substitute a hag of shredded real cheese or some other form of real cheese and cut some cost out of the whole deal. My mother taught me to be frugal and I just can't stand the thought of spending more than I have to to get what I want. At the same quality, of course. (When the birds fly over my house, they say "Cheep, cheep, cheep").
