Peppers and Sausage

I wanted something savory on a rainy Monday.  Peppers and sausage.


Ingredients
1 lb good smoked sausage
4 big bell peppers
1 large onion
1 can diced tomatoes, drained
Olive oil
1 T minced garlic
Salt, pepper

Cook it.
Chop onions and peppers into strips.  In a large skillet, brown the sausage and set aside.  Put olive oil, peppers and onion in the skillet, turn fire to medium-low, and cover the skillet.  The peppers and onion will start to "melt down".  Add browned sausage.  Salt and pepper to taste. Serve on a hoagie bun, or over rice, or just put it on a plate and eat it.
