Fajitas

This morning before school, I asked the boys what they wanted for supper.  Fajitas!  Okay.  I went to the grocers today and picked up some chicken and other goodies that we needed.  Then came home and sliced the chicken ad marinated it in a good fajita seasoning that grandson Quinton recommended.  Put it in the fridge to marinate.  When the boys got home from school today, we sliced the veggies (onion, peppers, and tomatoes), sprinkled them with that same seasoning, then dropped them on the griddle, along with the chicken and some good local venison sausage.  Then, we drizzled everything with lemon juice and let it fester on that hot iron.


When everything got cooked, we pushed it op to the top of the griddle and started laying out flour tortillas.

Just damn!  That turned out.  I had never used this particular seasoning.


They turned out pretty damned good.

    Fajitas (Fah-Hee-Tahz) used to be a very inexpensive cut of meat way back when. After removing the fat and skin away from meat, we slice the meat in 1" strips ACROSS the grain for easier chewing. Otherwise, the meat is a bit chewy (but still tasty). Some added lemon juice is not wasted.

    Wrap in tortilla (Tore-Tea-Yah) with some well baked potato and sliced avocado, simply scrumptious. Your recipe sounds awesome too

  2. Next time you're in the mood for fajitas, substitute brisket for the chicken. Mmmmmm!
