Chicken Tot Pie

 We've come to use this recipe when we're feeding a crowd, such as tonight.  The kids love it and the adults think it's an interesting idea.


Chicken Tot Pie.
Ingredients:
Tater-tots, pre-made in bag
Bag mixed vegetables
Can cream of chicken soup
Chicken, whole
Shredded cheese
Salt
Pepper

Assembly:
Boil your chicken.  Debone it, tearing the meat into small pieces.  Boil the vegetables in the chicken broth, drain the vegetables, add cream of chicken soup.  Mix meat, soup, veggies together, salt and pepper to taste. Put mixture in a casserole dish.  Top with tater-tots and bake in a 350 oven until the tots are done.  Top with shredded cheese and put back in oven till cheese melts.  Serve.  Enjoy.

This recipe is easy to double or triple.  The picture above is a quadruple recipe.

    Tonight is "Bus Driver's Chicken". Don't ask me why it's called that. I have no idea.

    Cut three raw chicken breasts into large pieces, (Six pieces per breast) and lay them out in the bottom of your casserole dish.

    In a saucepan, heat together:
    1 bar of cream cheese
    1 packet of dry ranch dressing
    2 cans of cream of mushroom soup

    Warm and stir until cream cheese melts into the mix, then spread over the chicken in the casserole dish.

    Bake at 325 for 1-1/2 hours.

    Serve over rice or egg noodles, whichever you like best.

    I made Chicken Tot pie earlier tonite for supper. Iused mushroom soup and some chicken from a supermarket rotissary chicke the Missus brought home a few days ago. Supper was gooood. Thanks for the recipe. Costco has huge chicken pot pies they make from left over rot. Chickens that went unsold. They are scrumptious. Costco uses real pie pastry and a vegetable medly of frozen stuff, peas, green beans, diced potato, broccoli, carrots and a gravy of their own. My only complaint is that there are only two of us now, and one of those pies will feedd fifteen people.
